Campus Dining Services continues its streak of excellence at the National Association of College and University Food Services (NACUFS) Midwest Regional Conference. Executive Chef Eric Cartwright was awarded second place and a silver medal in the Culinary Challenge on March 4, 2014.

The 2014 Midwest Regional Conference is taking place at Michigan State University. The culinary challenge was sanctioned by the American Culinary Federation and followed strict regulations on time, equipment, techniques and ingredients.

Eric’s winning dish included poached lobster with tomato cream, spinach coulis, beets, Boursin grit cakes and pickled cucumber.
